Cranberry Nut Loaf

*I'm cheating today...this is a re-post from a while back. I am short on time. But really, this bread needs a spot in our cranberry week, anyway. This is one of those things I could eat until I'm sick. Really. Don't miss this one!*


My hubby and I have a dream. One day, we will visit Ireland. It's one of those trips that I don't see happening until the kids are grown, so it'll be a while. For now, we'll enjoy the Eskimo kisses and the spontaneous wrestling matches that fill those special little moments in our life. Our day to wander the hills and admire the castles will come before we know it.

Still...we found this charming Irish bed and breakfast online a while back, Number 31, that published its Cranberry Nut Loaf recipe. It's so flavorful and not too sweet. For us, it's like a tasty trip without the packing (or $$).

We changed it around a little to make it easier to measure ingredients. Enjoy!


Cranberry Nut Loaf

1 cup fresh cranberries
1 3/4 cup flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup butter, melted
1 egg, well beaten
1 cup sugar
1/4 to 1/2 cup chopped walnuts
finely grated rind of 2 oranges
5 fl. oz orange juice

Chop cranberries. Sift flour, baking powder, baking soda and salt. Rub in butter and sugar. Whisk peel, juice and egg. Gradually add to flour. Add cranberries and nuts. Pour into greased loaf pan (9x5x3). Bake at 350 degrees for 60 to 75 minutes. Cool 15 minutes and remove from pan.

I saw the picture in my reader and had to come see! I have had to tame my talk about wanting to visit and live in Ireland to my poor hubby. I even attempt to speak that way sometimes. (I fear I may be a bit insulting to Ireland's natives!)

Thank you for bringing a "taste" of Ireland into my blog reader. This recipe looks yummy and like many recipes, will be easy to convert into gluten/dairy free to meet our dietary needs!
