Pancakes

This is the pancake recipe on the back of the Bisquick box. I think it's called Melt-In-Your-Mouth Classic Pancakes. I found that the lemon juice and baking powder eliminate the heavy "Bisquick taste" that you typically end up with when using Bisquick. It creates a fluffy pancake, which we love. Also, I found a great Bisquick copycat recipe, so I don't even buy it anymore...I make my own :)


Melt-in-your-mouth Pancakes

2 cups baking mix (Bisquick)
1 Tablespoon sugar
2 eggs
1 cup milk
2 teaspoons baking powder
2 tablespoons lemon juice

Mix together, and cook on a hot griddle. Yield: 14 pancakes
