Santa Fe Chicken


The idea for this recipe came from my friend, Jill
We share lots of stuff...recipes, laughs, 2 cents...
Anyway, back to the chicken...
This is one of those flavorful combinations that is so easy, you won't believe it!

1. Sprinkle chicken breast with chili powder. 

2. In a skillet on medium-high heat, sear on both sides in a little butter.

3. Throw chicken in a crockpot. {ok, don't throw it}


4. In a bowl, soften 8 ounces cream cheese. Pour a small jar of your favorite salsa on top.


5. Whisk it together. {no, it's not pretty...but go with me here}


6. Pour it over your chicken.


7. Put a lid on it ;)
{sometimes, I'm saying that all day long.}


8. Cook on low for a few hours 
{or forget to start it when you're supposed to...and cook it on high for a couple hours. 
It's not a fussy dish.}

I have a recipe almost just like this. Mine calls for black beans with it and corn. Yummy and easy!:o)

I too have almost the same recipe, but I just throw in the chicken breasts frozen and put the cheese in at the end. Also my recipe asks for beans and corn too. It is so yummy. I'll see if I don't blog about it some time soon.
