Spicy Orange Chicken


I was so hungry for Spicy Orange Chicken on rice the other day. After searching online, I combined a few recipes and added a little of this and a little of that and dinner was served. It was actually very good. I'll definitely be making it again...


Spicy Orange Chicken

1/4 cup flour
1 tsp salt
1/8 tsp pepper
2-3 Tbsp canola oil
1 lb boneless skinless chicken breasts, cubed
1/4 cup slivered orange peel
1 clove garlic, minced
1/2 tsp. ground ginger
1/2 tsp cayenne pepper
1 tsp crushed red pepper
1 Tbsp cornstarch
1 cup cool chicken broth
1/4 cup soy sauce
1/4 cup orange juice
1/4 cup dry sherry
1/2 cup orange marmalade

veggie additions (we like sautéed or steamed broccoli)

In large resealable bag, combine flour, salt and pepper; coat chicken in mixture. In wok or large skillet, heat oil over medium high heat. Add chicken, 1/3 at a time. Stir fry 3 minutes or until browned. Return all chicken to wok or pan. Add orange peel, garlic, ginger, cayenne and crushed red pepper. Stir fry 1 minute. In separate pan, sauté or steam broccoli or other veggies. Stir together remaining ingredients and stir into chicken, stirring constantly. Bring to a boil over medium high heat. Boil 1 minute. Serve with the veggies on hot rice.

Possible changes: We love a good sweet & spicy combo. I might add some brown sugar next time to highlight the "sweet". Also, I'd like to try some chilies or habeneros in this for some added kick. Sesame seeds and snipped scallions would be great as a garnish. Enjoy!
